- Set oven temperature to 400°F for baking.
- Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3 minutes until softened. Add minced garlic and sauté for 30 seconds until fragrant.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook for approximately 7 minutes until completely browned and no pink remains. Drain excess fat if needed.
- Pour in ketchup, mustard, Worcestershire sauce, then add salt, pepper, and smoked paprika. Stir thoroughly and cook for 2 minutes to blend flavors. Remove from heat.
- Fold in chopped pickles and 1 cup of shredded cheddar cheese until evenly distributed throughout the beef mixture.
- Transfer the seasoned beef mixture to a 9x13-inch baking dish, spreading it into an even layer across the bottom.
- Arrange frozen French fries in a single, even layer over the beef mixture, covering the surface completely.
- Bake uncovered for 25 minutes. Remove from oven, sprinkle remaining 1 cup cheddar cheese evenly over the fries, and return to oven for 10-12 minutes until fries are golden brown and cheese is fully melted.
- Allow the casserole to rest for 5 minutes before serving to let the flavors settle and make serving easier.
