- Preheat oven to 425°F. Line a pizza pan or baking sheet with parchment paper.
- Place peeled and cubed sweet potatoes in a medium saucepan, cover with water, and bring to a boil. Cook until fork-tender, about 10 minutes. Drain and let cool slightly.
- Mash the boiled sweet potatoes until completely smooth using a potato masher. Allow to cool to room temperature.
- In a mixing bowl, combine the mashed sweet potatoes, egg, flour, Parmesan cheese, salt, garlic powder, and black pepper. Stir until evenly incorporated.
- Transfer the mixture onto the prepared pan and press into a 12-inch round or oval shape, approximately 1/2 inch thick.
- Bake for 15 to 18 minutes until the crust is set and just beginning to turn golden around the edges.
- Remove the crust from the oven. Spread pizza sauce evenly over the surface, then layer with mozzarella cheese, pepperoni slices, and red onion. Sprinkle dried oregano on top.
- Return to the oven and bake for an additional 10 to 12 minutes until the cheese is fully melted and bubbly.
- While the pizza bakes, combine honey and red chili flakes in a small saucepan. Gently warm over low heat for 2 to 3 minutes without boiling. Remove from heat and let steep.
- Remove the pizza from the oven and let rest for 3 to 5 minutes. Drizzle the hot honey over the top just before slicing and serving.
